The most recent inspection found chicken below safe holding temperature, but staff caught it, reheated it to a safe 165°F, and verified with a thermometer on the spot. All prior inspections had no violations, showing this is an isolated, quickly-corrected issue rather than an ongoing risk.
Potentially hazardous food (time/temperature control for safety food) shall be maintained at 135°F or above. AMC 16.60.140(3-501.16) ***OBSERVED MULTIPLE CHICKEN DRUMSTICKS AND CHICKEN WINGS MEASURED BETWEEN 127°F - 132°F DURING THIS INSPECTION AT 11:30AM IN THREE OF THE HOT HOLDING UNITS. PERSON IN CHARGE SHOWED HEATING CHART INDICATING THAT CHICKEN WAS TAKEN OUT OF OVEN AT 10:45AM (172°F) THEN PLACED IN THE HOT HOLDING UNITS. PERSON IN CHARGE CORRECTED ON-SITE BY TURNING UP THE HOT HOLDING UNITS AND REHEATED THE CHICKEN DRUMSTICKS AND WINGS TO 165°F THEN USED A THERMOMETER TO VERIFY TEMPERATURE. ENSURE TO FOLLOW DIRECTIVE ABOVE.
