AMC 16.60.170(6-501.11) ***OBSERVED NO DOOR SWEEP ON THE BOTTOM AND A VISIBLE GAP TO THE OUTSIDE, LOCATED IN THE DRY STORAGE AREA OF THE FACILITY. PERSON IN CHARGE SHALL PUT IN A WORK ORDER TO INSTALL A DOOR SWEEP TO PREVENT ENTRY OF PESTS. ENSURE THE ABOVE GUIDANCE IS FOLLOWED.
In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. AMC 16.60.150(4-204.112.A) **TWO COLD HOLDING UNITS DID NOT HAVE A THERMOMETER. OPERATOR STATED THEY DID NOT HAVE ENOUGH THERMOMETERS AND WOULD BE OBTAINING TWO MORE FOR THE TWO UNITS. FOLLOW DIRECTIVE ABOVE.
A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions. AMC 16.60.150(4-501.15.A) **FINAL RINSE TEMPERATURE FOR THE HOT WATER SANITIZING WAREWASHING MACHINE MEASURED AT 162*F WITH THIS INSPECTOR'S THERMOMETER. THE DATA PLACE ON THE HOT WATER WAREWASHING MACHINE STATED THE FINAL RINSE TEMPERATURE NEEDS TO BE AT LEAST 180*F. THE OPERATOR STATED THEY ARE CONTACTING A SERVICE TECHNICIAN TO WORK ON THE MACHINE. OPERATOR TO USE THE 3-COMPARTMENT WAREWASHING SINK TO WASH / RINSE / SANITIZE UNTIL THE HOT WATER SANITIZING WAREWASHING MACHINE IS OPERATING AT THE TEMPERATURES STATED ON THE DATA PLATE. ENSURE DIRECTIVE ABOVE IS FOLLOWED.
