The temperature of the wash solution in spray type warewashers that use hot water to sanitize may not be less than the required minimum temperature specified in. AMC 16.60.150(4-501.110.A) ***HOT WATER WARE WASHING MACHINE TEMPERATURE WAS MEASURED AT 157°F. THREE COMPARTMENT SINK MUST BE USED TO SANITIZE DISHES UNTIL HOT WATER WARE WASHING MACHINE CAN MEET THE REQUIREMENTS ABOVE.***
