ONCE REMOVED FROM THE COMMERCIAL PACKAGE THIS FOOD ITEM NEEDS TO BE MAINTAINED AT 41*F. THE PIC HAD THE BARTENDER RELOCATE THE BOBA TO A MECHANICAL REFRIGERATOR. ENSURE THAT PRODUCT IS RAPIDLY COOLED TO 41*F AND MAINTAINED AT THAT TEMPERATURE.
