AMC 16.60.140(3-304.14.B) OBSERVED THE SANITIZER MIXED FOR WIPING CLOTHS WAS MORE THAT 100PPM. ENSURE SANITIZER FOR STORING WIPING CLOTHS IS MAINTAINED BETWEEN 50 AND 100PPM FOR CHLORINE BLEACH AND VERIFIED WITH TEST STRIPS. SANITIZER WAS REMIXED DURING THE INSPECTION.

  • [N] SINGLE-SERVICE ITEMS PROPERLY STORED, USED

    4-903.11 Equipment, Utensils, Linens, and Single-Service and Single-Use Articles. A. Except as specified in paragraph (D) of this section, cleaned EQUIPMENT and UTENSILS, laundered LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored: 1. In a clean, dry location; 2. Where they are not exposed to splash, dust, or other contamination; and 3. At least 15 cm (6 inches) above the floor. OBSERVED CLEAN BOWLS, PLATES, SINGLE-USE TAKE OUT TRAYS STORED NEXT TO THE VENT HOOD THAT HAS DUST BUNNIES ON THE HOOD, WALL AND CEILING ABOVE. ENSURE TO PREVENT CONTAMINATION BY CLEANING THOSE AREAS OF DUST AND SOIL.

    A test kit or other device that accurately measures the concentration of sanitizing solutions shall be provided. AMC 16.60.150(4-302.14) OBTAIN CHLORINE TEST STRIPS FOR CHECKING THE CONCENTRATION OF THE FACILITY SANITIZER AND DISH MACHINE.

  • [N] NONFOOD-CONTACT SURFACES CLEAN

    Non food-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. AMC 16.60.150(4-601.11.C) CLEAN CONDENSER GUARDS AND CEILING IN FRONT OF THE WALK-INN COOLER FANS OF DUST AND SOIL.

    Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service and single-use articles. AMC 16.60.170(6-202.11.A) SHIELD THE LIGHTS OVER THE COOK-LINE AREA.
