The only issue found was a warewashing machine not reaching proper sanitizing rinse pressure, and the operator was directed to use the manual 3-compartment sink for sanitizing until it's fixed—so dishes are still being properly sanitized. Prior inspections going back years show no violations at all, indicating a generally well-run kitchen.
A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions. AMC 16.60.150(4-501.15.A) **THE PRESSURE GAUGE ON THE HIGH TEMP SANITIZING WAREWASHING MACHINE DID NOT GO ABOVE 10PSI DURING THE FINAL RINSE CYCLE. THE DATA PLATE ON THE MACHINE STATES THE FINAL RINSE PRESSURE MUST BE BETWEEN 20-25 PSI. OPERATOR STATED THEY WILL PUT IN A WORK ORDER TICKET TO THEIR FACILITY MAINTENANCE TO WORK ON THE WAREWASHING MACHINE. OPERATOR MUST USE THE 3-COMPARTMENT MANUAL WAREWASHING SINKS UNTIL THE HIGH TEMPERATURE WAREWASHING MACHINE IS OPERATING IN ACCORDANCE WITH THE DATA PLATE. FOLLOW THE DIRECTIVE ABOVE.
