The only recent issue was an improperly thawed tuna package that was caught, discarded, and corrected on the spot, with staff retrained on proper procedure. There's no evidence of ongoing contamination, pest issues, or unsafe temperature control, and the prior inspection had no violations at all.
Potentially hazardous food (time/temperature control for safety food) shall be thawed: (A) Under refrigeration that maintains the food temperature at 41°F or less; or (B) Completely submerged under running water that is 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. (C) As part of a cooking process. AMC 16.60.140(3-501.13) ***OBSERVED REDUCED OXYGEN PACKAGED TUNA BEING THAWED IN THE WALK IN COOLER, THE PACKAGE INSTRUCTIONS INDICATE THE SEAL MUST BE BROKEN FOR THAWING TO BEGIN. THIS TUNA WAS COMPLETELY THAWED WITH THE SEAL STILL INTACT. PERSON IN CHARGE VOLUNTARILY DISCARDED THE TUNA AND INSTRUCTED IN PROPER THAWING METHODS FOR THE PRODUCT. ENSURE MANUFACTURE INSTRUCTIONS ARE FOLLOWING ON ALL REDUCED OXYGEN PACKAGED FOOD AND THE ABOVE GUIDANCE IS FOLLOWED. CORRECTED ON SITE.
