In manual warewashing operations, a temperature measuring device shall be provided and readily accessible for frequently measuring the washing and sanitizing temperatures. AMC 16.60.150(4-302.13) ***FOLLOW DIRECTIVE ABOVE TO ENSURE PROPER WASHING TEMPERATURE. The temperature of the wash solution in manual warewashing equipment shall be maintained at not less than 110°F or the temperature specified on the cleaning agent manufacturer's label instructions. AMC 16.60.150(4-501.19) TEMPERATURE OF WARE WASHING SINK (POWER SOAK SINK) WAS 80*F MAKE SURE WARE WASHING TEMPERATURE IS AT 110*F. A test kit or other device that accurately measures the concentration of sanitizing solutions shall be provided. AMC 16.60.150(4-302.14) *** TEST STRIPS ON SITE INDICATED THAT SANITIZE SOLUTION WAS AT 100PPM. VERIFIED CONCENTRATION WITH INSPECTORS TEST STRIPS INDICATING THAT THEY WERE DEFECTIVE. ENSURE YOU HAVE WORKING TEST STRIPS THAT ARE NOT DEFECTIVE.
