ENSURE THAT PROPER SIGNAGE IS POSTED TO REMIND WORKERS TO ONLY USE THE SINK FOR HANDWASHING AND TO HELP PREVENT THE SPREAD OF FOODBORNE ILLNESS. ENSURE SIGNAGE IS POSTED AND SECURED PROPERLY BY THE COMPLIANCE NOTED IN THIS INSPECTION REPORT.

AMC 16.60.140(3-501.16.A.2.a) Bacterial growth and/or toxin production can occur if time/temperature control for safety (TCS) food remains in the temperature "Danger Zone" 41*F to 135*F too long. Maintaining TCS foods under the cold temperature control requirements prescribed in this code will limit the growth of pathogens that may be present in or on the food and may help prevent foodborne illness. ***OBSERVED MULTIPLE FOOD ITEMS(IDENTIFIED IN THE MEASURED OBSERVATIONS TAB) THAT WERE MEASURED ABOVE THE COLD HOLDING THRESHOLD OF 41*F. PERSON IN CHARGE INDICATED THAT A SHIPMENT HAD ARRIVED WITHIN THE LAST HOUR AND THAT CASES HAD BEEN RESTROCKED IN THE LAST 20 MINUTES. FOOD IDENTIFIED OUT OF TEMPERATURE CONTROL WERE NOT DISCARDED, BECAUSE THEY HAVE BEEN OUT OF COMPLIANCE FOR LESS THAN TWO HOURS. BURRITOS IN WALK-IN COOLER WERE TEMPORARILY RELOCATED TO THE FREEZER TO BE RAPIDLY COOLED. BURRITOS IN DISPLAY WILL BE SOLD OR DISCARDED IN THE NEXT 4 HOURS. CORRECTED ON SITE.
