    The Person In Charge shall ensure that employees are properly trained in food safety as it relates to their assigned duties. AMC 16.60.130(2-103.11.L) ***FOOD WORKER INDICATED TO INSPECTION TEAM THAT FOOD BEING SERVED IN THE MOBILE FOOD ESTABLISHMENT(COOKED CHICKEN & FRY ROLLS) HAD BEEN HANDLED, PREPARED, COOKED/COOLED IN THEIR PRIVATE HOME. PERSON IN CHARGE WAS QUESTIONED ABOUT THE STORAGE OF FOODS IN A PRIVATE HOME AND CONFIRMED THAT THEY WERE AWARE OF THE FOODS PREPARATION AND THAT FOOD STORAGE CANNOT OCCUR IN PRIVATE HOMES. ENSURE THAT THE PERSON IN CHARGE IS MAINTAINING ACTIVE MANAGERIAL CONTROL OVER THE MOBILE FOOD ESTABLISHMENT, ALL FOOD WORKERS EMPLOYED BY THE ESTABLISHMENT, AND MAINTAINING EFFECTIVE FOOD SAFETY PRACTICES IN ACCORDANCE WITH AMC 16.60 AT ALL TIMES.

  • [C] HANDWASHING FACILITIES SUPPLIED, ACCESSIBLE

    A handwashing sink shall be maintained so that it is accessible at all times for employee use. AMC 16.60.160(5-205.11.A) ***Facilities must be maintained in a condition that promotes handwashing and restricted for that use. Convenient accessibility of a handwashing facility encourages timely handwashing which provides a break in the chain of contamination from the hands of food employees to food or food-contact surfaces. THIS IS NOT AN ACCEPTABLE METHOD OF FOOD PREPARATION, HANDLING, COOKING/COOLING THAT FALLS IN LINE WITH AMC 16.60. FOODS PREVIOUSLY IDENTIFIED IN THIS VIOLATION WERE VOLUNTARILY REMOVED FROM THE MOBILE FOOD ESTABLISHMENT BY THE PERSON IN CHARGE DURING THIS INSPECTION.     A test kit or other device that accurately measures the concentration of sanitizing solutions shall be provided. AMC 16.60.150(4-302.14) ***OBSERVED CHLORINE TEST STRIPS DURING THIS INSPECTION THAT HAD EXPIRED IN 2022 AND WERE INDICATED TO BE THE CURRENT TEST STRIPS BEING USED BY FACILITY TO CONFIRM THE EFFECTIVENESS OF CHLORINE SOLUTIONS.
