Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and after engaging in any activity that contaminates the hands. AMC 16.60.130(2-301.14) OBSERVED AN EMPLOYEE PUTTING ON GLOVES WITHOUT WASHING HIS HANDS. HE WAS TOLD TO WASH HIS HANDS BEFORE GLOVING UP. HE STATED HE HAD WASHED HIS HANDS, IN THE REST ROOM. THE EMPLOYEE WAS INSTRUCTED TO WASH HIS HANDS AGAIN AND ALL EMPLOYEES WILL BE REMINDED TO WASH HANDS WHEN RE-ENTERING THE KITCHEN AFTER USING THE REST ROOM.
