The permit holder shall require food employees to report to the Person In Charge information about their health and activities as they relate to diseases that are transmissible through food. A food employee shall report the information in a manner that allows the Person In Charge to reduce the risk of foodborne disease transmission. AMC 16.60.130(2-201.11.A) The Person In Charge shall notify the regulatory authority when a food employee is: (1) Jaundiced; or (2) Diagnosed with norovirus, Hepatitis A, Shigella, E. coli, or Salmonella Typhi. COMPLETION OF A FOOD EMPLOYEES REPORTING AGREEMENT (can be downloaded at www.muni.org/foodinfo ) BY ALL FOOD EMPLOYEES IS SATISFACTORY TO MEET THIS REQUIREMENT. FACILITY NEEDS TO ADOPT OR CREATE AN EMPLOYEE HEALTH POLICY THAT FOLLOWS THE ABOVE GUIDANCE BY THE COMPLIANCE DATE. Materials that are used in the construction of food-contact surfaces shall be safe, durable, corrosion-resistant, nonabsorbent, finished to have a smooth, easily cleanable surface, and resistant to pitting, chipping, and scratching. AMC 16.60.150(4-101.11) ***OBSERVED CRACKED TILES AND UNEVEN BREAKS IN THE KITCHEN FLOORS IN FACILITY. ENSURE THAT REPAIRS ARE CONDUCTED SO THAT ALL SURFACES ARE SMOOTH AND DURABLE, EASILY CLEANABLE SURFACES.
Non food-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. AMC 16.60.150(4-601.11.C) ***OBSERVED SHELVING IN COOLING UNITS, HANDLES, FLOORS, COOKING EQUIPMENT, THAT WAS COVERED IN GRIME, DEBRIS, FOOD DEBRIS, DUST, DIRT, ETC. ENSURE THAT WHEN CLEANING NON FOOD CONTACT SURFACES THAT THEY'RE CLEAN TO SIGHT AND TOUCH.
Potentially hazardous food (time/temperature control for safety food) shall be maintained at 41°F or below during cold holding. AMC 16.60.140(3-501.16.A.2.a) Bacterial growth and/or toxin production can occur if time/temperature control for safety (TCS) food remains in the temperature "Danger Zone" 41*F to 135*F too long. Maintaining TCS foods under the cold temperature control requirements prescribed in this code will limit the growth of pathogens that may be present in or on the food and may help prevent foodborne illness. ***ALL FOODS IN WALK IN COOLER MEASURED ABOVE 41°F. AMBIENT AIR TEMPERATURE OF COOLER MEASURED AT 49°F. PERSON IN CHARGE STATED SLICED TOMATOES AND CUT LETTUCE WERE PREPARED 8/8 AND HAD BEEN IN COOLER OVERNIGHT. RAW BACON, DELI HAM, AND PASTEURIZED EGG MIXTURES HAD BEEN IN COOLER AT LEAST SINCE 8/8 AS WELL. PHOTOS OF INTERNAL TEMPERATURES ATTACHED TO INSPECTION REPORT. DISCUSSED TEMPERATURE REQUIREMENTS WITH PERSON IN CHARGE AND DISTRICT MANAGER, FOODS WERE VOLUNTARILY DISCARDED. EMPLOYEES MAY USE TIME AS A CONTROL FOR TOMATOES AND LETTUCE ONCE THEY ARE CUT, ENSURE COOLER IS REPAIRED AND FOODS REQUIRING REFRIGERATION ARE NOT STORED IN THIS UNIT UNTIL IT CAN BE VERIFIED TO HOLD FOODS AT OR BELOW 41°F. NOTIFY THIS INSPECTOR WHEN UNIT IS REPAIRED.
Food shall be protected from contamination. AMC 16.60.140(3-307.11) ***OBSERVED ICE CREAM CONES STORED IN A MANNER THAT EXPOSES THEM TO VISIBLE DUST AT THE TOP OF THE UNCOVERED HOLDER. ENSURE A LID IS PLACED AT TOP OF HOLDER TO PREVENT CONTAMINATING ICE CREAM CONES.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under AMC 16.60.150(4-1) and AMC 16.60.150(4-2). AMC 16.60.150(4-501.11.A) ***WALK IN FREEZER FAN GUARDS HAVE BEEN REMOVED AND UNIT IS COVERED IN HEAVY ICE. ENSURE UNIT IS DEFROSTED AND FAN GUARDS ARE REPLACED.
A backflow or backsiphonage prevention device installed on a water supply system shall meet American Society of Sanitary Engineering (A.S.S.E.) standards for construction, installation, maintenance, inspection, and testing for that specific application and type of device. AMC 16.60.160(5-202.14) ***OBSERVED Y-SPLITTER ON MOP SINK DOWNSTREAM OF BACKFLOW PREVENTER. Y-SPLITTER MUST BE REMOVED TO PREVENT POTENTIAL BACKFLOW FAILURE AND POTENTIAL CONTAMINATION OF WATER SUPPLY. INFORMATION PROVIDED TO PERSON IN CHARGE.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. AMC 16.60.170(6-201.11) ***WALL AND COVING BEHIND 3 COMPARTMENT SINK HAS BEEN REMOVED EXPOSING RAFTERS, ENSURE WALL AND COVING IS REPAIRED AS DESCRIBED ABOVE.
