ENSURE ALL HANDWASH STATIONS ARE PROPERLY PROVISIONED TO PROMOTE PROPER HANDWASHING.
Refrigerated, ready-to-eat, potentially hazardous food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded. AMC 16.60.140(3-501.17.A) ***OBSERVED MULTIPLE FOOD ITEMS (COOKED GROUND BEEF, COOKED RICE, COOKED CHICKEN) REQUIRING DATE MARKING THAT DID NOT HAVE DATE MARKING IN THE WALK IN AND FREEZERS. PERSON IN CHARGE INDICATED THEY COOKED LARGE BATCHES AND FREEZE FOR LATER USE. THERE WAS NO DATE MARKING SYSTEM IN PLACE THAT WAS ABLE TO BE OBSERVED DURING THIS INSPECTION. ENSURE FOODS THAT ARE COOKED AND FROZEN FOR LATER USE HAVE THE DATE THEY WERE MADE AND REPLACE THE DATE WHEN THEY ARE THAWED FOR USE, ALL COOKED FOODS HELD IN THE FACILITY FOR MORE THAN 24 HOURS REQUIRE DATE MARKING.
Non-food-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. AMC 16.60.150(4-101.19) ***WOODEN STAND SUPPORTING THE TORTILLA PRESS IS MADE OF UNTREATED WOOD. USE A HIGH GLOSS WHIT LATEX PAINT TO SEAL AND PROTECT THE WOOD SURFACE. CLEAN AS FREQUENTLY AS NEEDED. Non food-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. AMC 16.60.150(4-202.16) ***COLD HOLDING UNIT DOOR GASKETS ARE IN DISREPAIR AND NEED TO BE REPLACED. ENSURE NEW GASKETS ARE INSTALLED AND CLEANED REGULARLY TO PREVENT THE ACCUMULATION OF FOOD DEBRIS.
Living or sleeping quarters located on the premises of a food establishment such as those provided for lodging registration clerks or resident managers shall be separated from rooms and areas used for food establishment operations by complete partitioning and solid self-closing doors.
