Food shall be obtained from sources that comply with law. PACKAGED FOOD shall be labeled as specified in LAW, including 21 CFR 101 FOOD Labeling, 9 CFR 317 Labeling, Marking Devices, and Containers, and 9 CFR 381 Subpart N Labeling and Containers, and as specified under §§ 3-202.17 and 3-202.18. AMC 16.60.140(3-201.11) ENSURE ALL FOOD ITEMS BEING SOLD WITHIN THIS MOBILE UNIT ARE OBTAINED FROM APPROVED SOURCE. ALSO ENSURE ALL FOOD ITEMS BEING SOLD HAVE THE REQUIRED LABELING AS SPECIFIED ABOVE. SEVERAL BREAKFAST BURRITOS WERE OBSERVED WITH THE MISSING LABELING. THESE FOOD ITEMS MAY NOT BE SOLD AND MUST BE REMOVED FROM THIS MOBILE.
The operator of a permitted food establishment not directly connected to a water supply and subject to 18 AAC 80 shall take the following actions at least annually or, for food establishments operating seasonally, prior to opening: 1. Superchlorinate each potable water tank for at least two (2) hours with fifty (50) ppm chlorine solution; 2. Drain, thoroughly rinse, and refill the tank; 3. Submit samples of potable water being used in the facility to a certified laboratory for coliform analysis every twelve (12) month during operation; and 4. Forward a copy of the coliform analysis report to the department within five (5) days of receiving the results of the analysis. THE TEST RESULTS MUST BE MAINTAINED WITHIN THE MOBILE UNIT AND BE AVAILABLE FOR INSPECTION. ENSURE WATER SAMPLES ARE SUBMITTED TO AN APPROVED LAB BY THE COMPLY BY DATE LISTED WITHIN THIS INSPECTION.
