    The temperature of the wash solution in spray-type warewashers that use chemicals to sanitize may not be less than 120°F. AMC 16.60.150(4-501.110.B) ***MEASURED THE FINAL RINSE TEMPERATURE OF THE WAREWASING MACHINE AT 116*F DURING THIS INSPECTION AFTER 2 CONSECUTIVE CYCLES. THE SANITIZING CONCENTRATION OF THE CHLORINE BASED SANITIZER WAS MEASURED AT 50PPM. ENSURE THAT THE WAREWASHING MACHINE IS SERVICED, REPLACED, OR REPAIRED SO THAT THE FINAL RINSE TEMPERATURE IS AT LEAST 120*F.

AMC 16.60.170(6-202.15) **OBSERVED THE DOOR SWEEP AT THE REAR DOOR THAT WAS NOT COMPLETE ACROSS THE BOTTOM OF THE DOOR. LIGHT WAS ABLE TO ENTER FROM THE OUTSIDE. ENSURE THE DOOR SWEEP AT THE REAR DOOR IS ACROSS THE ENTIRE DOOR AND NO LIGHT CAN ENTER. FOLLOW DIRECTIVE ABOVE.

    (A) Equipment that is fixed because it is not easily movable shall be installed so that it is: (1) Spaced to allow access for cleaning along the sides, behind, and above the equipment; (2) Spaced from adjoining equipment, walls, and ceilings a distance of not more than 1 millimeter or one thirty-second inch; or (3) Sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage. (B) Counter-mounted equipment that is not easily movable shall be installed to allow cleaning of the equipment and areas underneath and around the equipment by being: (1) Sealed; or (2) Elevated on legs as specified under AMC 16.60.150(4-402.12.D). **OBERSERVED ICEWELL MACHINE IN THE BAR THAT WAS NOT SEALED TO THE ADJOINING WALL ACROSS THE ENTIRE TOP OF THE MACHINE. ENSURE ALL CLEAN IN PLACE EQUIPMENT HAS BEEN SEALED TO THE WALL AS DIRECTED ABOVE.
