This was an opening inspection with just one issue: frozen steam buns were found thawing outside proper temperature control. The item was still frozen (no real spoilage risk yet) and staff immediately corrected it by moving them to proper cooling. This is a minor, quickly-fixed procedural issue rather than an ongoing food safety hazard.
Potentially hazardous food (time/temperature control for safety food) shall be thawed: (A) Under refrigeration that maintains the food temperature at 41°F or less; or (B) Completely submerged under running water that is 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. (C) As part of a cooking process. AMC 16.60.140(3-501.13) STEAM BUNS FOUND OUT OF TEMPERATURE CONTROL BUT STILL FROZEN. IF TIME AS A CONTROL FOR PUBLIC HEALTH IS USED THE 4 HOURS BEGINS THE FOOD IS REMOVED FROM TEMPERATURE CONTROL (FREEZER/REFRIGERATOR/OVEN/HOT HOLDING UNIT). STEAM BUNS WILL BE RELOCATED TO THE COOLERS IN THEIR CAR.
