AMC 16.60.140(3-501.17.A) ***OBSERVED MULTIPLE FOOD ITEMS SUCH AS: COOKED MEATS & COOKED ANIMAL STOCK STORED IN THE WALK-IN COOLER WITHOUT ANY DATE MARKING IN PLACE. THERE WAS NO DATE MARKING SYSTEM ABLE TO BE OBSERVED DURING THIS INSPECTION. ENSURE THAT WHEN STORING COLD HELD, TIME/TEMPERATURE CONTROLLED, POTENTIALLY HAZARDOUS FOODS FOR MORE THAN 24 HOURS WITHIN THE FACILITY THAT THE FOOD ITEMS ARE DATE MARKED WITH A PREP/COOK/THAW DATE AND/OR A DISCARD DATE, AND THAT THE ITEMS ARE NOT STORED WITHIN THE FACILITY FOR MORE THAN 7 CALENDAR DAYS. ADHERE TO THE ABOVE GUIDANCE IMMEDIATELY.
Food shall be protected from contamination by storing it in a clean and dry location where it is not exposed to splash, dust, or other contamination; and at least 6 inches above the floor. AMC 16.60.140(3-305.11.A) ***OBSERVED A POT OF ANIMAL STOCK BEING STORED DIRECTLY ON THE FLOOR AND UNCOVERED IN THE WALK-IN COOLER. ENSURE WHEN STORING FOODS THAT THEY'RE STORED AT LEAST 6 INCHES OFF OF THE FLOOR IN ORDER TO PREVENT THE SPREAD OF FOODBORNE ILLNESS AND REDUCE THE RISK OF CROSS CONTAMINATION DUE TO ENVIRONMENTAL FACTORS. PERSON IN CHARGE WAS INFORMED AND PLACED THE POT OF ANIMAL STOCK ONTO A RACK OFF OF THE FLOOR.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. AMC 16.60.170(6-301.14) Effective handwashing is essential for minimizing the likelihood of the hands becoming a vehicle of cross contamination. It is important that handwashing be done only at a properly equipped handwashing facility in order to help ensure that food employees effectively clean their hands. Handwashing sinks are to be conveniently located, always accessible for handwashing, maintained so they provide proper water temperatures and pressure, and equipped with suitable hand cleansers, nail brushes, and disposable towels and waste containers, or hand dryers. It is inappropriate to wash hands in a food preparation sink since this may result in avoidable contamination of the sink and the food prepared therein. **OBSERVED MULTIPLE HANDWASHING SINKS THROUGHOUT THE ESTABLISHMENT THAT DID NOT HAVE SIGNS OR POSTERS TO NOTIFY FOOD EMPLOYEES TO WASH THEIR HANDS NOR WERE THE SINKS LABELED FOR HANDWASHING ONLY. ENSURE ALL HANDWASHING SINKS ARE LABELED FOR HANDWASHING AS DIRECTED ABOVE.
The operator of a food establishment shall ensure that openings to the outside are effectively protected against the entrance of rodents, insects, and other pests by tight-fitting, self-closing doors, closed windows, screening, controlled air currents, or other means. Screening material shall be tight-fitting, free from breaks, and not less than 16 mesh to the inch. AMC 16.60.535.D *OBSERVED LIGHT ENTERING FROM A BREAK IN THE DOOR SWEEPS AT THE BOTTOM OF THREE DOORS THAT LEAD TO THE OUTDOORS AND OBSERVED LIGHT ENTERING BETWEEN THE DOUBLE DOORS AT THE ENTRANCE THAT LEADS TO THE OUTDOORS. REPAIR AND/OR REPLACE THE DOOR SWEEPS FOR THE DOORS MENTIONED ABOVE. ENSURE ALL OPENINGS TO THE OUTSIDE ARE EFFECTIVELY PROTECTED AGAINST THE ENTRANCE OF RODENTS, INSECTS, AND OTHER PESTS BY FOLLOWING THE DIRECTIVE ABOVE.
A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. AMC 16.60.160(5-501.17) **OBSERVED A CUSTOMER TOILET ROOM ON THE SECOND FLOOR INTENDED FOR USE BY FEMALES THAT DID NOT HAVE A COVERED RECEPTACLE. ENSURE ALL RESTROOM INTENDED FOR USE BY FEMALES HAVE A COVERED RECEPTACLE AS DIRECTED ABOVE.
Seal around pipes that go through walls. AMC 16.60.545.A.5 **OBSERVED THREE PIPES COMING THROUGH THE CEILING AT THE BACK WALL BEHIND THE SECONDARY KITCHEN COOK LINE THAT WERE NOT SEALED. SEAL THE AREA AROUND THE AFOREMENTIONED PIPING. ENSURE ALL PIPING THAT GOES THROUGH A WALL IS SEALED AS DIRECTED ABOVE.
