    Each handwashing sink shall be provided with disposable towels for drying hands; or a continuous towel system that supplies the user with a clean towel; or a heated-air hand drying device. AMC 16.60.170(6-301.12) ***OBSERVED HANDWASHING STATION IN THE FOOD PREP AREA OF THE KITCHEN THAT WAS NOT PROPERLY PROVISIONED WITH PAPER TOWELS DURING THIS INSPECTION. ENSURE THAT ALL HANDWASHING STATIONS REMAIN WELL PLUMBED, IN GOOD REPAIR, AND PROPERLY PROVISIONED WITH HOT WATER, SOAP, AND PAPER TOWELS/DISPOSABLE TOWELS OR SIMILAR APPARATUS FOR DRYING HANDS. PERSON IN CHARGE WAS INFORMED AND PROPERLY PROVISIONED THE HANDWASHING STATION WITH PAPER TOWELS. CORRECTED ON SITE DURING TODAYS' INSPECTION.

(C) As part of a cooking process. AMC 16.60.140(3-501.13) ***OBSERVED COMMERCIALLY PACKAGED, SEASONED BEEF CHUCK THAT WAS THAWING IN A FOOD PREP SINK DURING THIS INSPECTION. BEEF CHUCK WAS COMPLETELY SUBMERGED IN WATER, HOWEVER THERE WAS NO RUNNING WATER FLOWING OVER THE MEAT THAWING. ENSURE THAT WHEN THAWING FOODS, THAT THEY ARE THAWED IN ACCORDANCE WITH ONE OF THE APPROVED METHODS ABOVE. PERSON IN CHARGE WAS INFORMED, AND SINCE THE MEAT HAD NOT COMPLETELY THAWED, THEY OPTED TO BEGIN FLOWING RUNNING WATER OVER THE MEAT THAT WAS NO MORE THAN 70*F TO CONTINUE THAWING THE FOOD ITEM PROPERLY. CORRECTED ON SITE DURING TODAYS' INSPECTION.
