THIS IS THE OPENING INSPECTION FOR THIS ESTABLISHMENT; THE ESTABLISHMENT HAS NOT OPERATED YET. PERMIT HOLDER STATED THEY WILL REMOVE THE AFOREMENTIONED PRODUCT AND OBTAIN A CHLORINE-BASED CHEMICAL SANITIZER INTENDED FOR USE ON FOOD-CONTACT SURFACES. THE ESTABLISHMENT HAS A COMMISSARY LETTER STATING THEY WILL BE DOING THE MAJORITY OF THEIR WAREWASHING AT THE COMMISSARY KITCHEN. THE COMMISSARY KITCHEN DID HAVE THE CORRECT CHEMICAL SANITIZER. FOLLOW DIRECTIVE ABOVE.
A test kit or other device that accurately measures the concentration of sanitizing solutions shall be provided. AMC 16.60.150(4-302.14) **OBSERVED A WATER TESTING KIT INTENDED TO TEST THE DRINKING WATER, NOT THE CHLORINE-BASED CHEMICAL SANITIZER THAT WAS PRESENT. PERMIT HOLDER STATED THEY WILL BE USING A CHLORINE-BASED CHEMICAL SANITIZER. PERMIT HOLDER MUST OBTAIN A CHEMICAL TEST KIT OR DEVICE TO TEST THE CONCENTRATION OF THE CHEMICAL SANITIZER THAT IS BEING USED.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. AMC 16.60.170(6-201.11) **OBSERVED SOME CRACKS OR CHIPS IN THE WALLS AND A FEW HOLES WHERE PIPING HAS BEEN RUN THROUGH THE WALLS OR FLOORS THAT NEED TO BE SEALED. ENSURE ALL CRACKS, CHIPS, AND HOLES ARE SEALED SO THAT THEY ARE SMOOTH AND EASILY CLEANABLE. FOLLOW DIRECTIVE ABOVE.
