PERMIT HOLDER MUST ENSURE ALL COLD-HOLDING UNITS HAVE A TEMPERATURE MEASURING DEVICE AS DESCRIBED ABOVE. FOLLOW DIRECTIVE ABOVE AT ALL TIMES.
Warewashing machines that provide a fresh hot water sanitizing rinse shall be equipped with a pressure gauge or similar device such as a transducer that measures and displays the water pressure in the supply line immediately before entering the warewashing machine. AMC 16.60.150(4-204.118.A) ***THE GLASSWARE WAREWASHING MACHINE AT THE BAR DID NOT HAVE A PRESSURE GAUGE AS DESCRIBED ABOVE. THE PERMIT HOLDER CALLED THE COMPANY THAT SERVICES THE MACHINE AND A REPRESENTATIVE CAME OVER TO THE ESTABLISHMENT TO REVIEW THE MACHINE. THIS INSPECTOR DISCUSSED THE NEED FOR THE PRESSURE GAUGE, THE REPRESENTATIVE STATED THEY WILL COME BACK TO INSTALL A PRESSURE GAUGE AS REQUIRED ABOVE. PERMIT HOLDER MUST USE THE MAIN WAREWASHING MACHINE IN THE KITCHEN OR USE THE THREE-COMPARTMENT MANUAL WAREWASHING SINKS IN THE MAIN KITCHEN TO UNTIL THIS MACHINE HAS HAD THE PRESSURE GAUGE INSTALLED AND VERIFIED THAT IT IS WORKING. PERMIT HOLDER MUST ENSURE THE DIRECTIVE ABOVE IS FOLLOWED AT ALL TIMES OR WHEN REPLACING WAREWASHING MACHINES.
