The most recent inspection found one temperature violation (pulled pork slightly above 41°F after only an hour in the fridge), which was immediately corrected by reheating for service - not a chronic or severe issue. The earlier violation about the waste water tank slope was a minor equipment/setup issue during an opening inspection, not an active food contamination risk.
Potentially hazardous food (time/temperature control for safety food) shall be maintained at 41°F or below during cold holding. AMC 16.60.140(3-501.16.A.2.a) Bacterial growth and/or toxin production can occur if time/temperature control for safety (TCS) food remains in the temperature "Danger Zone" 41*F to 135*F too long. Maintaining TCS foods under the cold temperature control requirements prescribed in this code will limit the growth of pathogens that may be present in or on the food and may help prevent foodborne illness. ***OBSERVED COOKED PULLED PORK (44F) MEASURING ABOVE 41F LOCATED IN THE STANDING FRIDGE. PERSON IN CHARGE STATED THAT THE ITEMS HAD BEE LOADED INTO THE FRIDGE 1 HOUR PRIOR TO THIS INSPECTION. PERSON IN CHARGE AGREED TO REHEAT THE PULLED PORK WITHIN THE NEXT 40 MINUTES FOR TODAYS SERVICE.
